One of Australia's most famous estates, Penfolds was founded in 1844 by an English physician, Christopher Rawson Penfolds. Initially, the estate produced mainly fortified wines (in the style of port or sherry), but also some dry white and red wines. By 1900, this property had built a solid reputation, particularly thanks to its great red wines for aging. Since 1950, the estate has specialized in red wines, made from Syrah, thanks to cellar master Max Schubert.
The estate has been successively acquired by various companies, until it is now owned by Treasury Wine Estates. The vineyard is located in the heart of the Adelaide Hills in South Australia. Today, it is the emblem and standard-bearer of great Australian wines. It owes its renown in part to the consistent quality of its wines; This applies to all of its vintages, despite the substantial size of its vineyard (around 700 hectares), including the entry-level ranges. Employed by Penfold's since 1931, Australian Max Schubert created with great imagination and determination an exceptional wine recognized worldwide: Penfold's Grange. This wine, formerly sold under the code Bin 95, then Grange Hermitage, owes its name to the Penfold's founder's farm, Grange Cottage, which itself takes its name from the shyraz grape variety.
Wishing to develop a rich, complex wine with long aging potential, Max Schubert used primarily shyraz, the local name for Syrah, to which he added a touch of Cabernet Sauvignon through ruthless selection. The first vintage was produced in 1951.
Since then, the wine has established its own style: distinguished and complex, it reveals an intense bouquet of black fruits with peppery and minty notes. Its color is deep black with some purple highlights. You can pair it with a fine cut of meat such as chicken breast or any dish in sauce. Needless to say, it has immense aging potential. Expect to age for about thirty years without any problem, and don't hesitate to open it a few hours before serving.
