Winemaker Henri Bonneau embodied, perhaps despite himself, the entire Châteauneuf-du-Pape appellation, alongside Château Rayas. He came from a family of winemakers established in the region since 1667. Born in 1938 and deceased in 2016, he represented the twelfth generation. He trained with his parents at the family estate in 1961.

With a quiet, peasant temperament, the reputation of his wines contrasted with his character. He would endlessly repeat, "The secret (of my wines) is that there aren't any!" He cultivated only six hectares of vines with modest yields, producing Grenache (85%), Mourvèdre, Counoise, and Vaccarèse.

He aged his wines for a long time, from four to eight or ten years, and then used to arbitrate after tastings, which he carried out on the same date, in the same place and at the same time. His son Marcel Bonneau, born in 1973, succeeded him and continues to produce wine at Domaine Henri Bonneau.
