Vaillons is a blend of 5 climats (Epinottes, Roncières, Séchet, Chatains, and Beugnons). It is a very classic wine with notes of white flowers and iodine. Its very sunny exposure and its valley sheltered from the north winds give it a fairly early maturity, allowing it to be appreciated from the first years. It does not have the usual austerity of young Chablis.

Details

The Droin family has been cultivating vines and producing wine for at least 5 centuries. The first member of the Droin family is mentioned in Chablis in 1547, Jehan Droin, who was already cultivating vines. In 1698, we know that a Jean Droin was not only a winemaker, but also a brandy maker and master cooper. The estate was expanded in 1791 with the purchase of national property. The Droins continued to manage their estate over the centuries and took on responsibilities within the wine-growing community. Thus, Louis Droin was elected president of the Union of Winegrowers of Chablis in 1923, which would become the Syndicat de Défense de l'Appellation Chablis, of which Jean-Paul Droin was one of the vice-presidents. The latter took over the family estate in 1983, supported by his son Benoît, to whom he handed over the reins in 2014.
Benoit Droin cultivates 26 hectares located in the finest terroirs of Chablis and spread across the four appellation levels: Petit Chablis, Chablis, nine Premiers Crus, and five Grands Crus.
