Managed according to traditional methods (manual harvest, controlled yields), Domaine Raveneau is today one of the most sought-after signatures of the Chablis appellation. The vineyard covers 7.5 hectares, divided into five Premiers Crus and three Grands Crus. Jean-Marie and Bernard Raveneau, the current owners, maintain the concern for perfection that has driven the house since its origins: for example, they prefer to harvest early to ensure a good level of natural acidity, even if it means chaptalizing, rather than picking over-ripe fruit. In three generations, the property has risen to the rank of legends: its worldwide notoriety makes the wines practically impossible to find, especially since the estate no longer accepts new customers, its entire harvest being reserved in advance. The wines reveal a beautiful consistency and always a remarkable harmony, with a very beautiful minerality associated with a honeyed touch due to aging in wood. Montée de Tonnerre is the largest plot of the estate with 3.12 hectares, located on the right bank of the Serein, just next to the Grands Crus. Planted between the 1950s and 1990s, it covers the places called Chapelot and Pied d’Aloup. This Premier Cru is often considered the equal of a Grand Cru, as it impresses with its complexity, power and minerality. Balanced and persistent, it is capable of aging admirably for 10 to 20 years.
