Produced only when the vintage allows, Château Gilette's Crème de Tête cuvée is harvested later than the other Sauternes produced at the estate. It is the result of a rigorous selection process: perfectly botrytized grapes and juice that flows at a minimum of 20°C upon leaving the press. Yields for this cuvée generally do not exceed 9 hl per hectare. Incredibly concentrated, it is a particularly rich and opulent wine, with a magnificent length on the palate and an aging potential of decades.

Details

This tiny Preignac cru (4.5 hectares), now under the care of Julie Médeville and her husband Xavier Gonet, is famous for selling only older vintages, aged for a long time in concrete vats (protected from the air), then bottled, and produced from very rich harvests (hence the term "crème de tête").

The characteristic bouquet of Château Gilette is undoubtedly the most original in Sauternes, with notes of citrus jam (bitter orange), enhanced by delicate earthy and spicy notes developed by time spent in such specific aging conditions. The preservation method favors reduction, avoiding oxidation, which explains the wines' astonishing youthfulness, even more than thirty years after their birth.
