Marie-Noëlle Ledru. Here's a name that thrills lovers of fine Champagne bubbles in search of confidentiality and excellence. It must be said that, far from convention, she creates superb wines from Pinot Noir, a grape variety that draws its nobility from the villages of Ambonnay and Bouzy, located in the heart of the Montagne de Reims terroir. There, she has 2.5 hectares of vines that she cultivates with respect. The soil is worked to promote microbial life and encourage the vines to draw on the necessary nutrients from deep within. The cultivation is therefore sustainable, and herbicides and fungicides are banned. In the cellar, traditional practices are perpetuated. Thus, fermentation takes place in inert containers (stainless steel and enameled steel vats) to preserve the freshness of the fruit. The wines are aged on their lees to gain roundness and suppleness, and disgorging is done manually. One thing is certain: tasting his wines is like tasting a somewhat forgotten expertise. A expertise that invites us, through his profound and refined wines, to contemplation.
