Located in Volnay, the Henri Boillot estate is, among other things, a specialist in the Puligny-Montrachet appellation. On 15 hectares, in the southern part of the Côte de Beaune, this discreet but renowned estate, well known to wine lovers, has been vinifying and breeding for several generations (1885 precisely) a remarkable range of prestigious wines from the greatest terroirs. Its grands crus from the Côte de Beaune in particular, distinguished, vigorous and masterfully harmonious, have established its reputation. Seven hectares of whites divided between Puligny-Montrachet Premier Cru (Les Perrières, Les Pucelles, Clos de La Mouchère), Meursault Premier Cru Les Genevrières and Savigny-les-Beaune Premier Cru Les Vergelesses. Today it is son Henri who has taken over the reins of the family vineyard and also of the trading structure created in 1996 for whites exclusively, and in which each Premier Cru or Grand Cru is produced by a single supplier in order to preserve the authenticity of the terroir. The whites, generally precocious, improve superbly over four to five years. This comes at the cost of rigorous and constant work in sustainable agriculture with plowing of the vines (8 to 10 passes per year), the choice of working without the use of weedkillers, a limitation of yields (40hl/ha on average) and manual harvests as late as possible. Note that in 2005 the estate unified its name with the purchase of Jean Boillot by Henri Boillot.
